Sourdough Crepe Recipe: How to Make With & Without Discard

Let’s make a homemade pie crust…I’m telling you, nothing will level up your holiday baking like this!

🥧 2 1/2 cups all-purpose flour
🥧 1 cup cubed very cold butter
🥧 1/2 tsp fine salt
🥧 4-8 TB ice cold water

Combine flour and salt.

Cube up very cold butter & add to the flour.

Gently toss the butter in the flour to coat all sides.

Using a pastry blender (or your hands) press the flour through the butter. I like to finish this step with my hands to leave flat pieces of butter throughout the mixture.

Add 4 tablespoons of ice cold water and mix with a wooden spoon. Don’t over work the dough as you would with bread dough. Combine just until the dough can be pressed together but is still slightly crumbly.

Add more water if needed.

Turn out dough onto plastic wrap (divide into 2)

Press dough into rounds using the plastic wrap.

If dough is warm, refrigerate briefly before rolling out 1/4” thick.

If using a top crust or lattice, brush with egg wash and sprinkle with sugar for that extra golden finish.

Bake in your favorite pie recipes.

We have had quite the busy season with baby goats being born, a new calf out of @sandyslopesfarms Dexter bull, Tully, and the unfortunate development that the calf’s mom had 4 blind quarters… meaning no milk for baby Charlotte.

After bottle feeding with raw milk from @sandyslopesfarms , we decided to bring on a new Jersey cow in milk to keep us, and Charlotte in milk.
